Happy to be One
At last I’m home again. So why I’m here, because it’s Aljon’s birthday!

I’ve been waiting for this for so long. After being in Manila for more than 3 months, I’m finally back home and now I can be with my family again specially with Aljon.

Aljon (my very first nephew, my sister’s son) is going to celebrate his birthday today! October 12 2008, I just remember that last year we were at the hospital waiting for Aljon to come out in this world and now, after a year, we were all together again to mark his first birthday.

Turning One...
Happy Birthday Dwayne! He is my Godchild and his mother is one of my closets friends. Too bad I can’t attend his 1st birthday celebration since I’m here working in Manila. Anyways, happy birthday again, Dwayne, Ninang loves you.

It's my Birthday!!!

Today is the most special month and day of my life. I will be celebrating my birthday today. Fortunately my birthday falls Sunday this year together with Father’s Day, so I have all the time in the world to celebrate it. My first celebration was at the office yesterday together with my other officemate and she’s a girl, too. Much younger than me though. We had fun and lots of food was served. Everyone was so delighted since they had a free snack again; this makes my officemates alive, having a free snacks/food.

I don’t have any party at home since I decided to celebrate it with my closets friends, I don’t know yet where or what restaurant we are going to eat. But I definitely want to enjoy this day, so probably watching a movie and do some joyful activities with my friends will do. Too bad my best friend is not here to join my celebration since she’s in Qatar and will be coming home next year. At night I will celebrate my birthday with my Mom.

As for my last celebration, it will be in Bora on June 22-24! And it’s only been a week from now. I can’t wait for my Bora trip. But for now…it’s time to celebrate my birthday, today!!!

Celebrating Father's Day

It’s Father’s Day again.

Happy Father’s Day to all daddy’s out there. To my one and only loving father who’s in God’s heaven now…happy father’s day, daddy.mwuaahhh!!!

For those of you whose father’s are still with you…Treat them well and let them feel that they are well loved and respected.

Since Father’s Day falls on Sunday, June 15, there’s no reason for us/you not to celebrate it. You can plan your celebration together with your whole family or you can even surprise your father’s on this day. Some might celebrate it going to restaurants or malls and some can just celebrate it inside of their homes, but what ever kind of celebrations you’ll have just make it wonderful and perfect. If you will happen to celebrate Father’s Day at home why not treat your Dads the whole day starting from a delicious breakfast, lunch and dinner and don’t forget desserts, too! How about a couple of beers, too, sounds good, aren’t it?

Well let me give you very delicious recipes from MSN.com that you can prepare for this very special day.

Breakfast: Blueberry Pancakes with Warm Blueberry Sauce

INGREDIENTS

  • 2 tablespoon(s) water
  • 1/2 teaspoon(s) cornstarch
  • 3 1/2 cup(s) blueberries
  • 5 tablespoon(s) sugar
  • 2 teaspoon(s) fresh lemon juice
  • 1 1/2 cup(s) all-purpose flour
  • 1 tablespoon(s) baking powder
  • 1/2 teaspoon(s) baking soda
  • 1/2 teaspoon(s) salt
  • 1 3/4 cup(s) buttermilk
  • 4 tablespoon(s) butter or margarine melted
  • 2 large eggs

DIRECTIONS

  • Preheat oven to 250 degrees F. Place cookie sheet in oven.
  • Prepare blueberry sauce: In 1-quart saucepan, combine water, cornstarch, 1 1/2 cups blueberries, and 2 tablespoons sugar, and heat to boiling over medium heat, stirring occasionally. Boil 1 to 2 minutes or until berries burst.
  • Remove from heat; stir in lemon juice.
  • Prepare pancakes: In large bowl, combine flour, baking powder, baking soda, salt, and remaining sugar. Stir in buttermilk, butter, and eggs just until flour mixture is moistened. Stir in remaining berries.
  • Lightly grease griddle or nonstick 12-inch skillet; heat over medium heat until very hot.
  • Drop batter by 1/4 cups onto hot griddle, spreading batter gently to make 4-inch rounds. Cook pancakes 2 to 3 minutes. (Pancakes are ready to turn when batter begins to set, bubbles start to burst, and edges look dry.)
  • Turn pancakes over, using a wide spatula. Cook 1 to 2 minutes longer, until puffy and undersides are a rich golden brown. Transfer pancakes to cookie sheet in oven; keep warm.
  • Repeat with remaining batter, greasing griddle if needed. Serve pancakes with blueberry sauce.


Dinner: Honey 'n' Orange Back Ribs

INGREDIENTS

• 5 to 6 pounds pork baby back ribs (loin back ribs), cut into 3- to 4-rib portions
• 1 29-ounce can tomato sauce
• 2/3 cup honey
• 1/2 cup finely chopped onion
• 1/4 cup soy sauce
• 1/4 cup red wine vinegar
• 2 teaspoons onion powder
• 2 teaspoons finely shredded orange peel
• 1-1/2 teaspoons garlic powder
• 1-1/2 teaspoons ground ginger
• 1 teaspoon barbecue seasoning

DIRECTIONS
  • To precook ribs, place ribs in a Dutch oven. Add enough water to cover ribs. Bring to boiling; reduce heat. Cover and simmer for 1 hour. Drain ribs and cool.
  • Meanwhile, for marinade-sauce, in a large saucepan combine tomato sauce, honey, onion, soy sauce, vinegar, onion powder, orange peel, garlic powder, ginger, and barbecue seasoning. Bring to boiling; reduce heat. Simmer, uncovered, for 10 minutes, stirring occasionally. Remove saucepan from heat; cool sauce completely.
  • Place an extra-large, self-sealing plastic bag in a large bowl. Place ribs in the bag. Pour about 3 cups of the cooled sauce over the ribs; seal bag. Turn ribs in bag to coat. (Cover and refrigerate remaining sauce to serve with ribs). Refrigerate ribs for 4 to 24 hours, turning bag occasionally.
  • To grill ribs, remove ribs from marinade, reserving marinade for brush on during grilling. Place ribs on the rack of an uncovered grill directly over medium coals for 25 to 30 minutes, turning and basting occasionally with some of the reserved marinade. Discard any remaining marinade. In a small saucepan heat the remaining sauce not used for marinating and pass with ribs. Makes 6 servings.

Dessert: Chocolate Bananarama Cream Pie

INGREDIENTS

  • 1/2 cup sugar
  • 3 Tbsp cornstarch
  • 2 cups whole milk
  • Yolks of 3 large eggs
  • 1 tsp vanilla extract
  • 6 oz semisweet baking chocolate, coarsely chopped
  • One 6-oz ready-to-fill Oreo cookie crust
  • 2 large, ripe bananas
Topping
  • 1 cup heavy (whipping) cream
  • 1/3 cup fat-free caramel topping
  • 1/2 cup almond toffee bits, plus extra for garnish

DIRECTIONS
  • Whisk sugar and cornstarch in a medium saucepan to blend. Gradually whisk in milk, then egg yolks. Bring to a boil over medium heat, stirring occasionally. Reduce heat to low and, stirring gently, cook 2 minutes to cook yolks. Remove from heat; stir in vanilla. Add chocolate; let stand 1 minute to melt, then whisk until blended. Refrigerate 15 minutes until slightly cooled.
  • Spread 1/3 cup chocolate custard over bottom of crust. Peel and thinly slice bananas; arrange over custard. Spread with remaining custard. Place plastic wrap directly on surface and refrigerate at least 5 hours or up to 1 day.
  • Up to 3 hours before serving: Beat Topping ingredients in a medium bowl on high speed until stiff peaks form when beaters are lifted. Sprinkle 1/2 cup toffee bits over custard. Drop dollops of topping on pie, or scrape topping into a ziptop bag, cut 1/2 in. off tip of 1 corner and pipe a design on pie. To garnish, sprinkle with additional toffee bits.

Planning Tip: Can be made through Step 2 up to 1 day ahead. Complete pie up to 3 hours before serving.

Another Birthday Celebration

Today is my sister’s birthday. We had luncheon together with her husband, Abner, Mommy, Glazel and Me. Too bad his son, Aljon; my nephew is still a baby so he can’t join us. Well, maybe next year he can. Oh, how I miss my Butchokoy!

We dined at Ocean Villa and the food was fabulous! Too bad I have to leave early since I have only 1 hour break.

Happy Birthday again, Sis!!! May you have many more birthdays to come and May God continue pour you blessings!

Full of Celebrations
This past weekend was filled with celebrations!winkwinkwink

May 9 - Happy Birthday to my cousin Donna! I love you cuzn and why don’t you get married by now, you’re getting old.lol

May 10 - Happy Wedding to my cousin Kuya Cezar and Mei! Congratulations! It was held at Santa Rita in Quezon City, I was one of the bridesmaids and the reception was at the Patio Ibarra. I like the place so much, love how it was decorated, the food and the party itself. It was a beautiful and lovely wedding. After the party one of my Aunts invited us to Alabang and we had dinner at Cabalen. After dining we stayed at The Bellevue Manila a 5 star hotel in Alabang. I really want to take a dip at the pool to bad I don’t have a swimwear. So we just go to the lobby of the hotel and since it was Saturday there was no band scheduled for that night so we just watched people ballroom dancing. After roaming around the hotel we go back to our hotel room and I really want to have "me time" at the bathtub but I was too tired to do that so I just watched TV till I fall asleep.

May 11 – Finally it’s Mothers Day! Happy Mother’s day again, Mommy! Luv yah!

May 12 – And lastly, celebrating Aljon’s 7 months in this world. Happy 7-Month-Old, Aljon! Aljon is my very first nephew and he’s learning and developing in advance. Love you my Butchokoysmile!!!

Mother's Day
Belated Happy Mother’s Day Mommy!!!

I know it’s a little late but hey, it’s better late than never, right?

My family and I were on out of town that’s why I haven’t posted it on time.

But do you know how mothers’ day started?

Mother's Day Story: Celebrations in the time of Greeks and Romans
The tradition of Mothers Day started with the ancient Greeks who celebrated their annual spring festival in honor of Rhea, the mother of many Gods and Goddesses in the Greek mythology. Ancient Romans too celebrated a spring festival by the name of Hilaria in honor of Cybele, a mother goddess, some 250 years before Christ was born.

Anyways, how do we celebrate mother’s day? We celebrate mother’s day on the road but had a nice luncheon.
